Grilled Halloumi & Mediterranean Salad Recipe

  • 200g halloumi cheese, sliced into 1cm thick pieces (*)
  • 1 tbsp olive oil (*)
  • 1 cucumber, diced
  • 200g cherry tomatoes, halved
  • ½ red onion, thinly sliced
  • 50g black or green olives, pitted (*)
  • 1 tbsp capers (optional) (*)
  • 1 tbsp fresh lemon juice (*)
  • 2 tbsp extra virgin olive oil (*)
  • ½ tsp dried oregano (*)
  • Fresh parsley or basil, chopped (for garnish)
  • salt & black pepper to taste

Step-by-Step Instructions

  • Prepare the Salad (5 minutes)
    • In a large bowl, combine cucumber, cherry tomatoes, red onion, olives, and capers.
    • Drizzle with lemon juice and 1 tbsp olive oil.
