What is Sriracha Sauce?

Sriracha sauce is a type of hot sauce made using sun-ripened chilli peppers. Originally from Thailand, Sriracha is probably named after the town where it was initially created: Si Racha, on the Gulf of Thailand, about 120km South of Bangkok. Now famous throughout the world, Sriracha sauce can be using as a condiment, a dressing, a marinade for meat, fish or tofu, or an ingredient in any recipe that requires some layered heat. With an extremely high proportion of chillis in every bottle, sweetened with sugar, soured with vinegar and thoroughly seasoned, Sriracha is often extremely hot but tempered by intimations of candied tang. Essentially, it is delicious and very versatile but you should always exercise caution when using it for the first time; everyone has their limits.

Sriracha is regularly sold in distinctive bottles which display the bright red sauce in all its glory. In the USA, the bird-based logo of one particular Thai brand of Sriracha means it is often referred to as ‘rooster sauce’ or ‘cock sauce,’ presumably by people who are unsure exactly how to pronounce its proper Thai name (sih-RAH-che).
