 Jalfrezi – meaning ‘hot fry’ – is an Indian version of a stir-fry that is believed to have originated around the early 19th Century. It is said that Jalfrezi came to be when people in India began currying leftover cold meats with onions and chillies. Hence, Jalfrezi curry sprang to life as a practical way to use up leftovers.
