  • Full of aromatic warmth from mild spices, the fruity flavours of mango zing in this curry, and are beautifully balanced by notes of savouriness from onions and nuttiness from cashews and coconut. 

    Around India’s coastline, where mango groves are abundant, you’ll find mangoes widely used in cooking. Often a staple in dishes from India’s South-West coast, locals love mangoes for their versatility. The ripest mangoes are used to make ‘ghashi’ which is a mellow, coconut-based mango curry. This kit draws inspiration from these coastal mango curries and is packed full of the flavour of sun-kissed mangoes, creamy coconut and mild spices.

Mango Purée (66%), Water, Coconut (4.5%), Sunflower Oil, Onion (3%), CASHEW NUTSGarlic, Sugar, Coconut MILK Powder, Ginger, Salt, Ground Spices, Dried Whole Spices (Red Chilli, Curry Leaves, Fennel Seeds), Curry Leaves, MUSTARD Seeds, Concentrated Tamarind Paste, Rice Flour, Ground Black Pepper, Green Chilli, MILK Proteins, Ground MUSTARD Seeds.

Storage

Store in a cool, dry place away. Once opened refrigerate and consume within 3 days. DO NOT use if pouch is bloated or leaking. 

Preparation and usage

  • Cut your chosen protein or vegetables into generous pieces.  

    1. Heat 1 tbsp of oil in a small pan, add spices and cook for 20 seconds. 
    2. Add the protein or vegetables and brown lightly (if using fish or seafood, hold back and add this along with the main sauce in step 3). Add the base sauce. Simmer for 1-2 minutes. 
    3. Stir in the main sauce and simmer for another 3-5 minutes, or until the protein or veg is cooked through. 

    Serves 2-3 with naans, rice or parathas.  

    As appliances may vary, these are guidelines only.

     If you don’t like whole spices, grind these in a pestle and mortar and add them with the main sauce in step 3 (before final simmer). Alternatively, if left whole, remove them with a spoon before serving.
