A member of the olive family, jasmine has a characteristic fragrance which is infused into tea by mixing jasmine flowers and tea leaves in a temperature- and humidity controlled environment for hours at a time. When the tea leaves have absorbed all of the jasmine fragrance from the flowers, they are typically blown away using big fans.
